Abstract
The adulteration of food with harmful substances and sub-standard ingredients has been a concern
since the beginning of civilization, as it does not only decrease the quality of food products but
also results in several ill effects on health. This study employed descriptive survey design with
quantitative research approach to investigate the knowledge level of matrons on food adulteration.
The population for the study is made up of matrons in the various high schools and basic schools
in the Ashanti region of Ghana from which a sample of 130 respondents were selected for the
research. The survey sample has 45% of the matrons from the basic schools and 55% from the
senior high school level. The matrons have different academic qualifications with 22.3%, 64.4%
and 12.3% possessing diploma, bachelor’s, and master’s degrees respectively.
The study revealed that, 98% of the matrons are aware and have knowledge on food adulteration
on the Ghanaian market whilst the remaining 2% responded negative with regards to awareness of
food adulteration on the market. This 2% of the respondents were from the category of matrons
with less than 1 year experience in their profession.
